Today is another beautiful day in Southern Wisconsin, we have the windows open in the sun-room and gazebo which allows the gentle breeze to stroll through the groups and couples enjoying their cheese pairing platters and wine flights. This beautiful weather makes me think of the Fourth of July Holiday that is just a few days away and all of the picnics, parades and family gatherings where people will be celebrating the birth of our Great Nation! In honor of this holiday we have a recipe and suggestions to make your entertaining a little easier.
First, if you are in a pinch and need to grab a quick item to share at an event, wine and cheese are great for summer picnics. Young wines are great with young cheeses; for example we recommend our Horizon Cuvee with Butterkase, Monterey Jack or even fresh Mozzarella and grab some quick greens basil, spinach or even some colorful peppers to dress it up. Also, no need to pre-slice it just put a knife next to it and cut one piece to get it started.

Wisconsin Red, White and Blue Slaw

Ingredients:
6 cups cabbage, shredded
6 slices bacon, fried, drained and crumbled
3/4 cup (4 ounces) crumbled Wisconsin Blue Cheese
1 pint (2 cups) cherry tomatoes, quartered
3/4 cup prepared slaw dressing

Cooking Directions:
In a large bowl, combine all ingredients; mix well. Chill 1 to 2 hours to blend flavors.
If you do not like blue cheese substitute with Blueberry White Cheddar
Pair with Blanc de Crescent white wine, Lady in Red and Release 4 red wines.
