Wine and Dine Pairing Event

Sunday we featured another fabulous Wine and Dine pairing with the Black Sheep. We thoroughly enjoy the wine pairing dinners since it allows us to showcase the magnificent pairings of Staller Estate Wines but also the extraordinary work of Tyler Sailsbery of the Black Sheep. Last Sunday’s Wine and dine pairing was even more special since we had a great, loyal local customer that captured the Wine and Dine process in pictures. Sevie Kenyon from Madison, has been enjoying Staller Estate Wines for many years and has had the marvelous experience of our Wine and Dine pairings several times. Sevie was so impressed with the production, presentation and product that he wanted to capture the experience in pictures. Below is the process from start to finish. Sevie has done a fantastic job in capturing the process, the only thing missing are the smells, swirls and tastes. For that you, will have to attend one of our Wine and Dine pairings.

Here comes the first course and wine

Soup and wine has started

Fresh Wisconsin orange ginger carrot soup with candied ginger

Paired with two wines

Blanc de Crescent– A bold dry white with distinct aromas of apricot and clove.

Release 4– dry, oak-aged red, firmly textured with aromas of fresh berry and creamy oak

Next course

Caprese salad of Wisconsin (fresh tomatoes, creamy mozzarella and garden fresh basil)
Paired with

Horizon Cuvee – A semi-dry full framed white wine with distinct grapefruit citrus aromas followed by a lingering palate of fresh fruit.

Entrée:

Pork medallions over goat cheese and light red beet Risotto
Wine pairings

Estate Reserve- Medium bodied dry red, slightly spicy with a hint of oak.
Lady In Red– Semi-dry red wine with deep aromas of dark cherry and raspberry with a medium body and moderate tannin level.

Wine pairing: Richmond Rouge – Fresh Concord grapes! This semi-sweet wine is made from the freshest Concord grapes, bursting with flavor and antioxidants!!
